Chicken barbee

1 fresh chicken

Marinate.

2 tbsp. sweet soya
2 tbsp. sweet chilli souce
2 t.sp. salt
1 tsp. ground black pepper
1 tsp. ground koriander

Cut the bird rigt in the back, and try open and flat it with you hand. Marinate with the mix and let it rest in the refrig over a night.
put it on the barbee about 1 hour.
Make sure the hot coals are lying both on the side in the barbe, so it's not gonna be direct heat under the chicken. That way it's not gonna be burned.

Carrots salad

2 pieces carrots, gratted
1 leave lettuce
100 gr. green olive
1 tomato
1 red bell peper
100 gr. raisin
100 gr. feta cheese

Dressing.
100 gr. sour cream
1 tbsp. lemon juice
1 tsp. sweet mustard
salt and pepper


Tear the leave a part and in the bowl. In goes carrots and the rest of ingredients. Mix all the dressing ingredients, pour on the salad before served.

Sushi


A nice and healty dish. Some says that it's too complicated to make it, but all you need it's just to concetrate and then bang....you're there.
Love it...

200 gr. sushi rice, cooked
100 gr. fresh/smoke salmon, cut in line
100 gr. fresh tuna, cut in line
5 sheet sushi nori
1 green cucumber, cut in line
1 tbsp. vinegar
1 tbsp. wasabi
2 tbsp. pickle ginger
2 tbsp. salty soya

Cook rice and when it's done pour the vinegar and mix ittogether. Prepare the nori on a bamboo roller or use baking paper if you don't have one. Lay rice on the nori with your finger, make you finger wet so it doesn't stick. Use finger tip to put wasabi on in line, the fish on and cucumber. Start roll it carefully until the nori closed together. Cut it in 4 pieces.
Dip it in the soya and eat it with the ginger.

You can always make it with prawn or smoke fish if you dont like raw fish. If you buy fresh tuna that haven't been frozen, put it in the frezzer for a couple hour to kill the parasit.
Be carefull with using the wasabi because it's kind of strong.
Now days you can find sushi kit easily in the market, so why not trying it.

Paella

Spanish speciality, a bit complicated but worth using time on it.

300 gr. Paella rice/basmati ris
250 gr. black tiger prawn
200 gr. chicken breast
500 gr. fresh mussels
300 gr. squid, sliced
1 red bell peper, grilled and peeled
200 green pees
1 big onion
2 cloves garlic
1 tsp. safron
1 tbsp. smoked paprika powder
1 liter chicken broth
salt and peper
2 tbsp. olive oil/vegee oil

Chop onion and garlic finely and fry them on a hot pan with the oil until golden, cut chicken breast into cube and in the pan. Pour the rice and paprika in and stir. Pour ½ liter chicken broth with the safron in, stir, cover the pan and leave it alone for about 10 mnt. Taste with salt and pepper. Check on the rice, pour some more chicken broth and leave it for a while with the lid on. When the rice are getting tender, put the prawn in until it change into pink, followed by mussels and cover it again until all the mussels opened. When all the mussels are open, try remove some of the shells so they don't fill up so much, put the squid in, stir and leave it for 2 mnt. There's 2 ways of cooking squid, fast cooking or long and slow cooking, or else it's gonna taste like rubber. Turn the heat off and red peper in.

This portion is enough for feeding 4 people.

Pasta Bolognese

Nothing that is easier then this.

250 gr. mince beef
300 gr. chop tomatoes
100 gr. tomato paste
200 gr. fresh mushroom, chopped
500 gr. pasta/spaghetti
200 gr. gratted carrots
1 big onion
1 clove garlic
1 tbsp. paprika powder
1 tsp. dry oregano
100 gr. fresh basil, chopped
2 tbsp. olive oil.

Chop onion and garlic finely and on a hot pot with olive oil until golden and in goes the beef. When the beef change to brown, in goes the mushroom, and the rest of the ingredients. Leave them cooked about 20 mnt. Cook pasta until it's soft but not too soft, the Italian call it al dente.

Serve it with baguette and gratted parmesan.

Beef steak with french fries

300 gr. sirloin steak
200 gr. french fries
mix green salad.
50 gr. margarine
1 tbsp olive oil
salt and pepper
1 dl. water
1 tbsp. corn flour

Heat margarine and oil in a hot pan. Season the steak and in the pan 3 mnt. each side.
Take the meat from the pan, let it rest while you pour watter in the pan and corn flour, mix together.
Serve the steak with french fries and green salad, and pour the gravy on the steak.

Easy....

Pasta salad with prawn and egg

200 gr. pasta, cooked and cold
200 gr. lettuce
150 gr. carrots, gratted
4 eggs, boiled 7 mnt.
250 gr. black tiger prawn, cooked
100 gr. raisin
300 gr. green cucumber, sliced.

Dressing:
100 gr. sour cream
2 tbsp. lemon juice
salt and peper


Mix pasta, lettuce, carrots, cucumber and raisin together. Pour the dressing mix over and the prawn spreaded over the salad and garnish with the egg.

Serve with hot bread.

Stjerneskud

In english is Shooting star. I have no idea why the danish name the dish that. But this is a kind of en open sandwich, and i belive it's only found in DK.

2 leaves of lettuce
1 slice of frecnh bread.
1 filet of flat fish breaded, fried
1 filet of flat fish, steamed
50 gr. fresh mushroom, sliced
50 gr. white in asparagus
100 gr. shrimp, cooked and peelled
Cherry tomatoes
Cucumber
2 slice of lemon
1 tbsp. mayonaise

Dressing:
100 gr. Sourcream
1 tsp. mustard
1 tbsp. lemonjuice
1 tsp. ketchup
salt and pepper

Mix all the Dressing indredients together.

Put bread on a plate, lay the leaves, fishes on, mushroom, asparagus, pour 1 tbsp. dressing on and mayonaise. Least but not at last, the shrimp om, and end with slice of lemon to make it look nice.

Pasta with seafood


A very nice Italian speciallity. easy to make and taste realy good.

500 gr. fresh Tagliatelle
250 gr. chopped tomatoes from a can
200 gr. fresh mushroom, chopped
500 gr. mix seafood
100 gr. tomato paste
1 onion
i cloves garlic
100 gr. green pees
1 tbsp. paprika powder
1 tsp. oregano
salt and pepper
1 tbsp. olive oil
Chop onion and garlic, into the hot pan with oil until golden. In goes the rest of the ingredients one by one. Let it cooked for 15 mnt. Cook pasta for 5 mnt. and done...you get your self a nice and easy dinner.

A pice of garlic bread should be perfect with it.

Kroket

1 kg. potatoes boiled and mashed
250 gr. chop beef
250 gr. carrots, pilled and grated.
200 gr. springonions, chopped
2 cloves og garlic, chopped
1 big onion, chopped
salt and pepper
2 tbsp. vegetable oil
2 eggs
300 gr. breadcrump
½ liter vegetable oil for frying

Fry onion and garlic on a hot wok with 2 tsp. oil until golden and the chopmeat afterwards until it changes colour. Carrots goes in and last but not at least, the spring onions. Tasted with salt and peper. Let them cook for 15 minuts. Put the filling in the mashed potatoes and blend them while they still hot. Let them cooled down a little bit and start form the blending into a small ball, as big as golf ball. put them in the refrig for a couple hours until they get cold and firm, so then it's easy to dip them in the beaten eggs and the breadcrump.
Fry in thehot oil until they change to golden.

Eat them with the small green chilli if you dare! :-)

Stirfried prawn with green beans

A little touch of chili.

500 gr. black tiger prawn, peeled and cleaned
500 gr. fresh green beans
2 pieces red chilies, chopped
1 big onion, chopped
1 big clove garlic, chopped
2 tbsp. sweet soya
1 tbsp. vegetable oil
salt and pepper.

Fry onion and garlic with the oil in the hot wok, in goes the chilies and the prawn until they change colour in to pink followed with soya, salt and peper. Green beans in the end and let them cooked for 15 minutes.
You can always reduce the chili or don't use it at all if you don't like spicy food.

Hot steamy jasmine rice and prawn chips will be good with it.

Meatball with curry sauce

This is how the danish likes eating their rice and curry. They normally use chopped pork, but my version is using chop beef and chicken.

250 gr. chop beef
250 gr. chop chicken meat.
1 onion, chopped
1 cloves garlic, chopped
2 tbsp. cornflour
1 tbsp. curry powder.
1 egg
salt and pepper.

mix greens, and steam rice.


Mix the beef, chicken, onion, garlic, 1 tbsp. flour and egg together. make them in to a small meat ball. Boil 1 lt. water, when it's boiling put the meat ball in, when they starting to float, it means it's ready. Fish them up. Put the curry powder in the boiling meatball water. Mix 1 tbsp. cornflour with a litlle water and pour it in the soup. The soup is starting to be thick, taste with salt and pepper. Put the meatball in to the curry sauce.
If you think the sauce is not thick enough, you can just make some more cornflour.

Serve with steamed rice and boiled greens.

Tun Mousse

Fresh start before the big meal...

150 gr. sour cream
200 dl. whipping cream, whipped
200 gr. tin tuna
3 tbsp. lemon juice
1 small onion, chopped finely
3 layers gelatines, soaked in cold water
3 eggs, hard boiled
300 gr. shrimp, cooked
salt and pepper.

Mix sour cream, whipped cream, tuna, lemon, and onion together, taste with salt and pepper.
Put soaked glatine in 1 dl. hot water and pour in the mixing and mix them together, Pour the mixing into a nonstick dish, let it stay in the refrige for couple hours until it set.
For serving it, find a flat dish and try flip the mixing over the dish carefully. Decorate with the shrimp, eggs, lemon and cucumber slices, cherry tomatoes and caviar. To make it look fresher, sprinkle with chopped chives over.

This dish can be made the day before, just let it stay in the refrige before serving it. Dont forget the garlic bread.

T-bone steak

Heavenly taste for the meat lover

500 gr. t-bone steak marinatte with olive oil, lemon juice, garlic, salt and pepper.

On the hot barbee arr. 10 mnt. each side.

Green salad and homemade bread will be great.

Finger food

To get your appetit up

Small pancake:
100 gr. wheatflour
3 dl. mælk
1 egg
1 tsp. baking powder
1 tbsp. vegee oil

Filling:
100 gr. sourcream
1 tbsp. lemon juice
1 clove small garlic, crushed
salt and pepper
100 gr. smoked salmon
250 gr. black tiger prawn, cooked
50 gr. chopped chives.

Mix all the pancake ingredients together and let it rest for 30 mnt. mix sourcream, lemon juice, garlic and taste with salt and pepper.

Fry the pancake on the nonstick pan about 1 tablespoon at a time.
When the pancake cold, put a teaspoon of the cream on and the salmon or the prawn, sprinkle with chives.

Don't forget to have chilled white wine with it....

Cold potatoes and broccoli salad

It's good to company your steak.

250 gr. broccoli, cooked and cold
200 gr. new potatoes, cooked and cold
1 red bell peper, grilled and peeled
150 gr. smokked bacon, fried

Dressing:

100 gr. sour cream
1 tsp. mustard
1 tbsp. lemon juice
salt and pepper
Mix all together


Cut broccoli and potatoes in small pieces, slice red peper in line. Lay all the ingredients on a dish, pour the dressing on and chrush with the bacon.

Steak, Chicken or Fish will fit in....
