Sushi


A nice and healty dish. Some says that it's too complicated to make it, but all you need it's just to concetrate and then bang....you're there.
Love it...

200 gr. sushi rice, cooked
100 gr. fresh/smoke salmon, cut in line
100 gr. fresh tuna, cut in line
5 sheet sushi nori
1 green cucumber, cut in line
1 tbsp. vinegar
1 tbsp. wasabi
2 tbsp. pickle ginger
2 tbsp. salty soya

Cook rice and when it's done pour the vinegar and mix ittogether. Prepare the nori on a bamboo roller or use baking paper if you don't have one. Lay rice on the nori with your finger, make you finger wet so it doesn't stick. Use finger tip to put wasabi on in line, the fish on and cucumber. Start roll it carefully until the nori closed together. Cut it in 4 pieces.
Dip it in the soya and eat it with the ginger.

You can always make it with prawn or smoke fish if you dont like raw fish. If you buy fresh tuna that haven't been frozen, put it in the frezzer for a couple hour to kill the parasit.
Be carefull with using the wasabi because it's kind of strong.
Now days you can find sushi kit easily in the market, so why not trying it.

Kroket

1 kg. potatoes boiled and mashed
250 gr. chop beef
250 gr. carrots, pilled and grated.
200 gr. springonions, chopped
2 cloves og garlic, chopped
1 big onion, chopped
salt and pepper
2 tbsp. vegetable oil
2 eggs
300 gr. breadcrump
½ liter vegetable oil for frying

Fry onion and garlic on a hot wok with 2 tsp. oil until golden and the chopmeat afterwards until it changes colour. Carrots goes in and last but not at least, the spring onions. Tasted with salt and peper. Let them cook for 15 minuts. Put the filling in the mashed potatoes and blend them while they still hot. Let them cooled down a little bit and start form the blending into a small ball, as big as golf ball. put them in the refrig for a couple hours until they get cold and firm, so then it's easy to dip them in the beaten eggs and the breadcrump.
Fry in thehot oil until they change to golden.

Eat them with the small green chilli if you dare! :-)

Jewish cookies.

My colleague gave me this recipe. It's really easy to make and so yummi....

200 gr. room temperature butter
150 gr. granulated sugar
200 gr. wheatflour
1 tsp. vanilla sugar
1 whole egg size L
1 eggyolk
1 tbsp. baking powder
1 tbsp. caster sugar mix with 1 tsp. cinnamon powder.
100 gr. almond, chopped


Mix butter, sugar, wheatflour, vanilla, 1 whole egg and baking powder together and make it into a shinny dough. Wrap it with clingfilm and let it rest in the refrige for an hour.

After an hour, roll the dough flat arr. ½ cm. thick. Cut it in to shape like heart, flowers ect. lay them on an oven tray covered with baking paper. Brush with beaten eggyolk and sprinkle with almond, sugar and cinnamon.

Acup of hot tea will be nice.

Finger food

To get your appetit up

Small pancake:
100 gr. wheatflour
3 dl. mælk
1 egg
1 tsp. baking powder
1 tbsp. vegee oil

Filling:
100 gr. sourcream
1 tbsp. lemon juice
1 clove small garlic, crushed
salt and pepper
100 gr. smoked salmon
250 gr. black tiger prawn, cooked
50 gr. chopped chives.

Mix all the pancake ingredients together and let it rest for 30 mnt. mix sourcream, lemon juice, garlic and taste with salt and pepper.

Fry the pancake on the nonstick pan about 1 tablespoon at a time.
When the pancake cold, put a teaspoon of the cream on and the salmon or the prawn, sprinkle with chives.

Don't forget to have chilled white wine with it....
